Celery root soup


One of the funniest looking ingredients makes a delicately flavoured soup, combining the freshness of celery root with a hint of orange.

– 1 bulb of celery root
– 1 leek
– 1 onion, diced- 1 fennel bulb, chopped
– 1 orange
– a large pinch of salt
Vegetable stock
– 1 celery stick
– 1 carrot
– 1 onion, slice

First prepare your vegetable stock, simmering the stock ingredients in a pint of water for an hour. Meanwhile, clean your celery root and cut into cubes of just over 1cm square. Roughly cut up the leek and place all the soup ingredients, except the stock in a pan and cover with water. Gently simmer for 30 minutes adding about half the vegetable stock (save the rest for another recipe). Next remove the orange peel and blitz the rest of your ingredients. Serve with a spoonful of cream cheese, shaved orange peel and chive.
